Breakfast on a Snowy Saturday

It's just me and my daughter this Saturday. Hubby is still at work. When it snows like this, they always have emergency OT until the snow stops. So, no Panera breakfast for us (our usual during weekends) instead we have these:

A garlic toast, eggs and bacon for Isabella with pink lemonade.

And, my egg sandwich on a wheat bread, coffee and watching the snow news on my ipod.

Simple Things Make Me Happy

Just went to my favorite fresh market and fresh salmon steaks for $4.99/lb. There were only 6 slices left, bought all of them for $22 bucks!
We love salmon so much, that's why.

Guess What I'm Cooking Tonight?

I have the string beans from my daughter's baby sitter's garden then the eggplants and bittermelons (ampalaya) from hubby's tennis partner, then I will just add some squash and shrimps that i have from the refrigerator and I am all set for pinakbet tonight. I used to put pork but i switched to shrimps as per hubby's request and he also does not like okra so i had to make changes. All is well, still the good old pinakbet that i used to love.

Home Cooked Meals

In preparation for the coming of hurricane Irene, I cooked a lot of food for storage just in case we lose power and we cannot cook. We did not eat neither of them yet because last night we ordered pizza. We will have some for dinner tonight and the rest will be for the rest of the week. Saves me from cooking after work. Everything is in the freezer now. Thanks Irene but no thanks.

Romain Lettuce For Sinigang

These are the veggies i normally use when i cook sinigang - spinach, kangkong, eggplants or green beans but I never tried romaine lettuce. We had a visitor and he cooked salmon sinigang for us and i was surprised that he used romaine lettuce for veggies. And i tell you, it's not bad at all with some radish too. So now, i am cooking sinigang again and i'm going to do the same thing. Romaine lettuce is easier to find in the supermarket than kangkong or spinach - it's a double purpose now - for salad and sinigang!

Black Friday Food

Grilled salmon with steamed asparagus in garlic and green onion teriyaki sauce - the perfect food for Good Friday. Our brunch was fried daing na bangus in vinegar with tomatoes and barrio fiesta's spicy shrimp paste. You know what i missed, the grilled eggplants! Next time.

My Spaghetti

During lunch break, I saw my co-worker warming up in the microwave some spaghetti with meatballs. It looked so good that when I went back to my desk, I found myself looking for a spaghetti recipe online. I want the Italian style spaghetti, not our own sweet spaghetti. I know I have a pack of sausage in my freezer that I can use but I need to buy some basil and dried parsley leaves. I remember I just cleaned my wall spice rack so I know what is missing there. I had plans of another spice rack but hubby objected to it and suggested that we just get a bigger one instead of having two kitchen spice racks. He was right, why put two spice racks when a bigger one can fit to save space? So, as I was saying about my spaghetti, I bought the spices I needed then cook it last night. Now, I have sausage spaghetti for lunch. I made a lot of sauce which I think I can use it for lasagna this weekend.

I put the spaghetti sauce in several containers to be kept in the freezer. I will just thaw each container as needed. This saves me from not cooking several dinners when I get home from work.

I Miss Balatong

At first, I did not get it. I mean, I was not sure what my husband means when he said, I want balatong. In our dialect, we don't call it balatong but mongo. Balatong to us is long beans. We have cooked mongo but we ran out of the mongo seeds for a while now so we kinda miss it. I usually cooked it with shrimps, malunggay and chicharon. I'm going to the filipino store this weekend to buy several bags of mongo seeds.

Bittermelon is Ampalaya

Because me and hubby felt so guilty after eating too much pork (lechon) and sweets at the christmas party we went to last Saturday, we decided to have the ginisang ampalaya with eggs for dinner. We are not getting any younger so we get conscious with our food intake these days. It's not like during our younger years.

I took a photo. I don't think I did a good job. Just came from the pot and I think i put too much egg. I 'm not a good cook but i always try.

Late Night Cheerios

I know it's almost midnight but I feel like I am hungry. I ate dinner though. So it won't be too much guilt, I got myself a bowl of cheerios with 2% milk. Everybody is already sleeping. This is what happens when you are not used to taking a nap in the afternoon.

Sorry for the blurry pic. Took it with my cellphone with just the night light on.

Leftovers

Got so busy cleaning my kitchen today. I did not get a chance to cook dinner. When everybody was getting hungry, hubby asked, "chinese food?" we answered, "nahhhh." I opened the refrigerator, took out the leftover chicken relleno, sliced them and the fry in the pan. It turned out to be so good, kinda crispy on the outside. I also fried some plantains. Dinner was done: yellow rice, fried rellenong chicken and plantains.
